Take a pan and boil 1/3 cup of water. Add the mango slices to the boiling water on low flame for 4-5 minutes. Stir occasionally!
To the pan, add grated ginger, cardamom pods, clove powder, cinnamon powder and sugar. Cook it on low flame and mix properly. Coo it for approximately 15-20 minutes until the slices become soft and tender, and the mixture turns thick.
Then add vinegar and salt to this thick mixture – and cook it for 4-5 minutes more!
Turn off the flame. Let the flame cool down at room temperature. Sprinkle cumin powder and red chili powder over the mixture and stir it well. As the chutney cools down, it gets thicker.

Desiccated Coconut: 1/3 cup
